Seasonal Home Cooking by the Season by VICKIE PRESSLER My name is Vickie Pressler. I’m a wife, moth- er of four and a grand- mother of two. I work part time at a local elementary school. By the end of May, I’m ready for summer vacation as much as all those school children are. While their summer might be filled with sleep- ing in or outside play, mine is like a race to tackle many neglected tasks. Summer is gearing up. There are things to do, places to see, and friends, family to visit. I want some simplicity in the kitchen. Preparing meals for my family or entertaining (which is mainly my growing family), means using the grill more often. To be honest, I’m a little self- ish. I try to think and plan menu items while shopping that can be grilled. It’s so nice that the oven is off more and the cleanup is less. Who doesn’t appreciate less cleanup? A couple of years ago. I had a delicious Cho- rizo burger at a local eatery. It was so good, I couldn’t wait to duplicate it. The Chorizo burger is better than the usual grilled burger. No other spices are needed because the chorizo sausage gives that extra flavor boost.This tasty burger is served with leaf lettuce, tomato slice, onion, bread and butter pickle slices, cheddar sliced cheese and of course your favorite condiments. Instead of typical baked beans as a side, why not go a step further and make a colorful, healthy bean salad? I’ve included my rendi- tion of Cowboy Caviar. This salad is a mixture of different beans, peppers, onions, tomatoes, and a homemade dressing. This is the perfect complement to the Chorizo Burger. Sweeten the meal with fresh fruit of the summer like a wedge or two of watermelon. This is a simple, tasty menu that will leave you time to enjoy your family, friends and your summer. Speaking of summer, I’m off to enjoy! Happy Eating! Chorizo Burger I Pound of ground Chorizo sausage I Pound of ground chuck Mix and form into four large patties. Grill till reaching inside temperature of 160 degrees. Add a slice of your favorite cheese and allow to melt.
